How we tell if a bakery is gluten-free

Gluten-free is the other question we get every week, and the answer is even easier to mess up than vegan: a gluten-free cookie in a wheat bakery is not a gluten-free bakery! We call a shop dedicated gluten-free when the business says the facility is gluten-free, celiac-safe, or that no gluten comes in the door. That claim has to live on a page they control — about, FAQ, allergen, menu header, or a certification they publish. Reviews that say “they have GF options” do not count. Wheat-free on a vegan menu does not count. “Almost all gluten-free” does not count.

HERE is the broad stroke. Directories argue about this constantly. Some will badge any shop that sells one labeled bar. Some want a third-party audit. Some treat dairy-free and gluten-free as interchangeable, which they are not. We pick the narrow rule on purpose: dedicated kitchen only. If the official page says the case is mixed, or that they offer gluten-free items in a kitchen that still uses wheat, it stays off Best gluten-free. That is why Sweetpea and Doe are vegan and not on this list. That is why Carina’s is vegan and still not dedicated gluten-free. That is why Hail Snail can sell a gluten-free snail without becoming a gluten-free shop.

Celiac-safe is their word, not a promise we invent. If they print celiac-safe or no gluten in the building, we will quote that. If they only print “GF options,” we will not upgrade it.

Gluten Free Gem is the celiac-safe shop on Broadway in Eliot. Kirari West is the dedicated gluten-free bakery café on Northwest 23rd. Hold The Wheat is Beaverton, every item in the case gluten-free. Blue Moon Bakery is the Hillsboro dedicated production bakery with a retail shop. Mikiko has dedicated gluten-free kitchens in Kerns and Beaverton.

We keep the gluten-free list short because a mixed-case badge would make the list useless for the people who actually need the dedicated kitchen. If a shop has not said that on its own site, we wait. When they do, it goes on the list. Until then, use Best gluten-free for the shops that already said it, and use the Journal when we have the visit written down.
