Carina's: vegan, soy-free fika in Beaverton

Scandinavian bakery on Lombard. Vegan and soy-free. Not a dedicated gluten-free shop. Confirm hours before you go.

We have been treating Beaverton like it was too far for pastry, and we FINALLY drove to 4725 Southwest Lombard, Suite 108, for Carina’s Bakery — a 100% vegan, 100% soy-free Scandinavian case that wants you in for FIKA anytime, not just when you already had errands on the westside! Owner Carina is the name on the door. The official About talks about pastry-school training, a visual disability, and hiring people the kitchen can actually accommodate. They say the journey is just beginning even almost ten years in. We are not inventing an opening year from that sentence.

The first thing you have to get right is the gluten-free line. As of June 2026 they say about 90% of the products are gluten-free. That is NOT a dedicated gluten-free bakery, and they say no when you ask if everything is 100% GF. Items marked (gf) on Toast are the ones we call gluten-free. Unmarked items stay unmarked. The shop is always vegan and soy-free. Dairy-free, egg-free, plant-based, Scandinavian — that is the badge they print.

HERE is what we order from the live Toast board. Almond Cake (gf). Pistachio Cake (gf). A large cupcake (gf). The coconut Drømmekage (gf). A donut (gf). Cake roll slice if we want a slice instead of a whole mood. Cookies if we are walking: Lemon Labrador, jumbo chocolate cherry truffle, caramel coconut patty, peanut butter delight, Sarah Bernhardt, Thin-O-Mint, or a baker’s-choice single. Everyday cookies run chocolate chip, chocolate cinnamon crackle, molasses, oatmeal raisin, a spicy peanut butter snickerdoodle, pistachio shortbread, vanilla lime shortbread. If we came for lunch, the move is a carrot lox smörgås, a cheeze-and-scallion biscuit, a deluxe biscuit sandwich, a mushroom schmeat pie, a sausage roll, or the veggie pot pie. Fresh mozz cheeze is cashew and coconut. Ice cream is scoops, pints, sandwiches, milkshakes, plus a minty pup cup if the dog negotiated the car ride.

Hours are the thing people still get wrong. Confirm on Toast before you go. The board has been Monday through Wednesday 9 a.m. to 5 p.m., Thursday through Saturday 8 a.m. to 7 p.m., Sunday 9 a.m. to 5 p.m. Labor Day is closed.

Special orders live on Toast: kladdkakor, toscakakor, large Scandinavian almond cake, pistachio cake, jumbo cinnamon swirl and cardamom bread ring as personal orders, marzipan tarts, cupcakes. We do not invent a wedding-cake program they did not publish. There is a Treat Drop for remote preorders — midnight Monday for a Wednesday route — if Beaverton is not your Tuesday.

We keep coming back because a vegan bakery that is also soy-free is rare, and a Scandinavian case that wants you to sit down for fika is rarer. Take the almond cake. Take a (gf) donut if the tray is loud. Take the carrot lox if you already missed dessert. Then get out before you call the whole shop gluten-free and make the one claim they have already told you is NOT true!
